The Best Chicken Noodle Soup

Ingredients

  • 3 garlic cloves, minced
  • 3 tbsp butter
  • ½ yellow onion, diced
  • 2 celery stocks
  • 2 carrots
  • 10 cups chicken bone broth
  • 2 tbsp Italian seasoning
  • ½ tsp black pepper
  • ½  tsp dried rosemary
  • 1 tsp dried sage
  • Pinch of red pepper flakes
  • 3 cups rotisserie chicken
  • Egg noodles
  • 2 tsp bouillon 
  • Salt, to taste
  • Fresh parsley, chopped
  • Fresh scallions, chopped


Instructions

  1. In a large pot or Dutch oven, add the butter over medium heat. Next, add the garlic and chopped onion, cooking 2-3 minutes and softening.
  2. Add the carrots and celery, along with the seasonings, mixing so everything is cooking.
  3. Add the bone broth, then turn the stovetop to high, bringing to a boil for about 10 minutes. Add the egg noodles, cooking according to the package.
  4. Turn the temperature to low, then add the chicken and bouillon. Mix and let cook for a few minutes. Taste to see if salt needs to be added.
  5. Add fresh parsley and fresh scallions, ladle into bowls, and enjoy!
