Ingredients You'll need:

This dish is made with simple, yet delicious ingredients. The simplicity keeps this dish quick and easy to make! You likely have some of these ingredients already in your pantry or fridge.

  • Salmon — good-quality salmon that is fresh is the best for this recipe! It will cook better and hold the flavor really well.
  • Olive oil — extra virgin olive oil is the best option to use for this recipe as it has the most flavor! The salmon absorbs the rich olive oil while it roasts in the oven.
  • Garlic — freshly minced garlic is best for this garlic herb roasted salmon, but you can absolutely use jarred minced garlic to save time!
  • Dill — I used fresh dill for this recipe; it’s bright, earthly, and adds a great touch to this recipe.
  • Parsley — parsley is one of the stars of this recipe! This herb is delicious and pairs perfectly with olive oil.
  • Shallot — as shallots cook, they mellow and become very sweet and mild, with a hint of garlic.
  • Lemon juice — lemon juice adds a little bit of acidity to balance out the depth and richness of the olive oil.
  • Italian seasoning —  a little bit of Italian seasoning rounds out the flavor profile of this dish with a mix of dried basil, oregano, and thyme.
  • Salt — kosher salt is a must for almost every recipe!

Tips for Garlic & Herb Roasted Salmon

I love this recipe because it is only made with a few ingredients, it’s healthy and extremely filling! I know that if you make this for your family or friends, they will all love it. There are a good few tips to keep in mind when you make this recipe.

  • Fresh herbs — while dried parsley and dill can be used in a pinch, fresh herbs give the best flavor and aroma (other than the Italian seasoning).
  • Lemon — don’t skip the fresh lemon juice—it adds a wonderful brightness and acidity that complements the richness of the salmon. I also don’t suggest artificial lemon juice, fresh is best here!
  • Check salmon for doneness — the salmon is done when it flakes easily with a fork and has an internal temperature of at least 145°F (63°C).

Description

Garlic herb roasted salmon is a delectable and nutritious dish that combines the rich flavors of fresh herbs and garlic with tender, oven-roasted salmon. Simple to prepare yet elegant enough for special occasions, this recipe offers a perfect balance of taste and health benefits, making it a favorite for both weeknight dinners and festive gatherings. You can prep this the night before to let it marinate in the refrigerator, and just roast it when you are ready!

Ingredients

Scale
  • 2 salmon fillets, skin removed
  • ½ cup extra virgin olive oil
  • 4 tbsp garlic, minced
  • 4 tbsp fresh parsley, roughly chopped
  • 1 tbsp fresh dill, roughly chopped
  • 1 small shallot, finely diced
  • Juice of half a lemon
  • 1 tsp Kosher salt

Instructions

  1. Preheat your oven to 400 degrees. Note: If you are letting the salmon marinate overnight, preheat the oven when you are ready to roast it.
  2. Pat the salmon dry on both sides and sprinkle the salt evenly on both sides, and set aside.
  3. In a small baking dish whisk together the olive oil, garlic, parsley, dill, and lemon juice. Add in the salmon, rubbing the garlic and herb marinade all over the salmon so it’s covered on both sides. Spoon the garlic herb mixture over the salmon to ensure it’s all well-covered!
  4. Roast the salmon for 15 to 20 minutes and completely cooked through. Thicker salmon filets will need longer! Serve immediately over pasta or rice, or even with a sauce, and enjoy!

Yes, you can use dried herbs if you don’t have fresh ones on hand! Fresh herbs will definitely provide a more vibrant flavor and aroma, so keep that in mind. If you choose to use dried herbs, use about one-third of the amount called for fresh herbs.

The salmon is done when it flakes easily with a fork and has an internal temperature of 145°F (63°C). It should be opaque and tender. However you can cook your salmon longer if you want it more well done!

Yes, I highly recommend that you marinate the salmon with the garlic herb mixture for up to 30 minutes before baking (and overnight). This allows the flavors to penetrate the fish more deeply!

Yes, this recipe could work well with other types of fish such as trout, cod, or halibut. Adjust the cooking time based on the thickness of the fish and as needed!
