Blueberry White Chocolate Cookies

These Blueberry White Chocolate Cookies are inspired by a Blueberry Muffin cookie I saw Justine Snacks make on Instagram, and they are so delicious! After watching a video of her creating a blueberry cookie, I knew I had to try it out myself, but with my own twist.

These Blueberry White Chocolate Cookies taste just like a blueberry muffin — so comforting and soft. I used frozen blueberries and white chocolate chips to create a delicious cookie that I know I’ll make again and again!

Blueberry White Chocolate Cookes

Ingredients

  • 1.5 cups frozen blueberries, thawed
  • 3/4 stick salted butter, softened (or vegan butter to keep the color more blue)
  • 1 cup white sugar
  • 2 cups flour
  • 1 tsp salt
  • 1 tbsp baking soda
  • 1 cup or more white chocolate chips
  • Blue food coloring as desired (3-5 drops to help keep the cute blue color)

Ingredients

  • 1/2 lb shrimp
  • Pad Thai noodles, cooked and rinsed with cold water
  • 1 bell pepper, thinly sliced
  • 4 garlic cloves, minced
  • 2 eggs, beaten
  • Cilantro, chopped
  • 1/2 c Green onions, thinly sliced
  • 1 lime
  • 1 c Bean sprouts
  • 1/4 c Peanuts, optional
  • Salt and pepper
  • 1/4 cup light soy sauce
  • 1 tbsp sriracha
  • 2 tbsp brown sugar
  • 1 tbsp fish sauce
  • 1 tsp peanut butter


Notes

  • This recipe is gluten and dairy free!
  • Can be vegetarian if you use tofu or leave out the shrimp
