Baked Tortellini With Sweet Italian Sausage​

My Baked Tortellini with Sweet Italian Sausage is a comforting and delicious dish perfect for any night of the week. Tender spinach and cheese-filled tortellini combined with sweet Italian sausage and a rich, tomato-based sauce, then topped with pesto, mozzarella cheese, and seasoned breadcrumbs then baked to perfection. This hearty, flavorful casserole is easy to prepare and sure to be a hit with family and friends. Ideal for cozy dinners or special gatherings, it’s a recipe you’ll want to make again and again.

My Baked Tortellini is an easy dish that comes together in about 30 minutes and is great for serving a crowd of friends or family. I recently tested this recipe out as a surprise for my in-laws and my father-in-law loved it so much that he requested it for our family beach trip this summer!

What is Baked Tortellini?

At its core, Italian cuisine is about simplicity and quality ingredients. My Baked Tortellini with Sweet Italian Sausage recipe embodies these principles, offering a straightforward yet immensely comforting meal that’s perfect for both busy weeknights and special gatherings! It’s a dish that brings together the robust flavors of sausage, the comforting and soft texture of tortellini, and the classic flavors of tomato sauce—all baked to perfection for a truly unforgettable dining experience.

The best part about this dish is that you don’t have to cook the pasta before baking it! Just make sure that you use either refrigerated or frozen tortellini (I used spinach & cheese) to ensure the pasta bakes perfectly. The only cooking involved is cooking the sausage before adding it to the baking dish. Once the sausage is cooked and the sauce is heated up, it’s a simple dish to assemble! I layered the sausage & sauce, then the pasta, topped with pesto, and I simply repeated one more time until the baking dish was full. Then I covered the top of the dish with shredded mozzarella cheese and seasoned breadcrumbs and baked it until it was browning and bubbling. Once it was done baking, I topped with freshly chopped basil and grated parmesan — absolute perfection! 

Pro Tip

► You can make this dish ahead of time! Make this a day or two in advance, and then pop it into the oven when you are ready to bake it. Be sure to cover it well to make it air-tight. You can also freeze this before baking too and it will hold up for a few weeks!

Ingredients You'll need:

This dish is made with simple, yet delicious ingredients. The simplicity keeps this dish quick and easy to make! You likely have some of these ingredients already in your pantry or fridge.

  • Tortellini — Obviously! I recommend using either refrigerated or frozen tortellini. You won’t have to cook the pasta ahead of time unless you use dried pasta! This helps save time and it comes out perfectly.
  • Italian Sausage — My recommendation is specifically sweet Italian sausage. It brings out another level of flavor to this baked tortellini.
  • Marinara sauce — A good marinara sauce is key here. I used some seasonings to elevate the flavor some, but it’s important to use a quality marinara that you trust and love! For this dish, I used the Carbone Marinara Sauce and I loved it. 
  • Breadcrumbs — After layering on the cheese, I topped the dish with about 1 cup of seasoned breadcrumbs. My favorite —this is a surprise to even me— are the Gluten Free Italian Style Breadcrumbs from Kroger
  • Parmesan cheese — Can you go wrong with adding a little more cheese in a dish? I garnished the dish with a sprinkle (okay, a big sprinkle) of Parmesan at the end.
  • Mozzarella cheese — Shredded mozzarella cheese is great with this dish! It’s easy to sprinkle overtop, giving it that bubbly and cheesy goodness.
  • Pesto sauce — I added about 1/4-1/2 cup of pesto in this dish to give it a little brightness for the summertime. I carefully added spoonfuls around the middle of the dish and overtop before baking it. You can use homemade or store-bought pesto! 
  • Garlic — Garlic is my favorite, so no shocker that I used freshly minced garlic here! Feel free to use store-bought minced garlic to save some time.
  • Basil — I added some sliced basil after baking the dish to give it some brightness.
  • Seasonings — I used Italian seasoning, onion powder, garlic powder, oregano, Kosher salt, and a little bit of black pepper.

Tips for Baked Tortellini

Thankfully this is a pretty easy dish! But I like to share some notes I made to make this even easier! 

  • Use refrigerated or frozen tortellini — This ensures that the pasta cooks perfectly!
  • Sausage links vs. ground sausage — You can absolutely use sausage links instead of ground sausage! Just cut the sausage link gently lengthwise and remove the casing. Be sure to break up the sausage as you cook it to make equally sized-pieces.
  • Sauce — The sauce is key here! You can use your favorite kind of marinara if you have a preference. As long as it is well-seasoned, it’s going to be great!
  • Baking dish — I recommend a medium-sized baking dish (about 9×9) to ensure everything fits and bakes evenly. You can easily use a 9×13 dish, and create one layer instead of two layers.

You can prep this the night before to let it marinate in the refrigerator, and just roast it when you are ready!


Ingredients

  • 2 salmon fillets, skin removed 
  • ½ cup extra virgin olive oil
  • 4 tbsp garlic, minced
  • 4 tbsp fresh parsley, roughly chopped
  • 1 tbsp fresh dill, roughly chopped
  • 1 small shallot, finely diced
  • Juice of half a lemon
  • 1 tsp Kosher salt


Instructions

  1. Preheat your oven to 400 degrees. Note: If you are letting the salmon marinate overnight, preheat the oven when you are ready to roast it.
  2. Pat the salmon dry on both sides and sprinkle the salt evenly on both sides, and set aside.
  3. In a small baking dish whisk together the olive oil, garlic, parsley, dill, and lemon juice. Add in the salmon, rubbing the garlic and herb marinade all over the salmon so it’s covered on both sides. Spoon the garlic herb mixture over the salmon to ensure it’s all well-covered!
  4. Roast the salmon for 15 to 20 minutes and completely cooked through. Thicker salmon filets will need longer! Serve immediately over pasta or rice, or even with a sauce, and enjoy!
